Papaya Fruit Salad

 Many of times while in the travels of Beachcomber Pete, I will look forward to the fresh fruit that is served for breakfast. From the countryside of Colombia to the beaches of the Caribbean there is nothing like eating tropical fresh fruit while enjoying the scenery. Here is a great Papaya fruit salad for breakfast or as a summer time dish. A fast prep time and will serve 4 people or 1 person several days.

Ingredients

2 large ripe Papayas

1 ripe cantaloupe

1 ripe pineapple

2 bananas

Instructions

First cut papaya into haves long ways and then scope out the seeds with a table spoon. Then cut the papaya length wise in halves again and and slice the meat into cubes with a sharp knife.

 Next cut the cantaloupe in half an scoop out the seeds with a table spoon. Then cut the half sections into quarters and with a sharp knife cube the meat of the cantaloupe.

 Next take the pineapple and cut off the top and bottom. Next with a sharp knife trim outside of skin off. I find if I cut the pineapple with 6 sides I get most of the skin off without losing much of the meat. Then I slice the pineapple length wise into 4 quarters. Leaving about 1 inch square in the middle which is the core or hard part of the pineapple.

Next place into large bowl and mix and place in refrigerate till ready to serve.

When ready to serve cut bananas into thin slices and place on top of fruit.
