Latin American Egg Nog
Not really on the exotic side, yet this is a favorite during the holidays. A must have in our house, Egg Nog is found all through the Caribbean and Latin America countries.
Below is the recipe for REAL EGGNOG. We serve this every year for our family and friends and is very much thought after during Christmas and New Years. Eggnog has gotten a bad rap over the years, but hey it is only once a year and you will be back on that diet after the New Year. So go ahead and give this authentic recipe a try and gain a whole new appreciation for a fun seasonal treat!
12 Eggs, separated 1½ cups Sugar ¾ cup of Jamaican dark rum (any dark rum may be substituted) 1 quart Whole Milk 1 pint Whipping Cream Grated Nutmeg
Beat egg whites until soft peaks form. Beat yolks with sugar until creamy; add Jamaican dark rum to yolk mixture which serves to "cook" the yolks. Add milk, stir. Fold in egg whites, then whipped cream until smooth, but don't stir too vigorously. You need to keep the air in the egg whites and whipping cream in order to maintain the light fluffy nature of drink. Use a ladle to pour into wide-mouth glasses and sprinkle with fresh nutmeg. Serve with spoon as everyone always wants to clean their glasses.
