Jamaican Jerk Chicken Wings
There is nothing like pulling one’s self up to a beach front bar in Montego Bay or Negril while looking at the waters of the Caribbean. Maybe sitting at a pool side bar in Kingston, Jamaica and ordering a plate of Jerk Chicken Wings, a traditional Jamaican dish, made with Jerk seasoning. This simple rub gives a whole new meaning to eating chicken wings. In Beachcomber Pete’s many travels to Jamaica this simple dish has become a favorite. If you can’t make the trip to Jamaica, but want to try making some Jamaican Jerk Wings at home to share with friends; there are many good rubs available or jerk sauces that are pre-made in the supermarket. However, you will find there is nothing better than making your own rub or sauce from scratch. To spice things up a little more you might want to throw in a Jamaican Red Stripe beer and a little reggae music; you have a wining combination! Here is a recipe we have found and used many times at Pete’s Place and has become a favorite with neighbors and friends.
- 1 tablespoon Ground All Spice
- 1 tablespoon Dried thyme
- 1 1/2 teaspoons Cayenne pepper
- 1 1/2 teaspoons Freshly ground black pepper
- 1 1/2 teaspoons Ground sage
- 3/4 teaspoon Ground nutmeg
- 3/4 teaspoon Ground cinnamon
- 2 tablespoons Garlic powder or fresh
- 1 tablespoon Sugar
- 1/4 cup Olive oil
- 1/4 cup Soy sauce
- ¾ cup White Vinegar
- 1/2 cup Orange juice
- 2 Limes halved and juiced
- 1 Scotch bonnet pepper (habanero)
- 3 Green onions -- finely chopped
- 1 cup Onion -- finely chopped
- 1 cup of rum, if able Jamaican Appleton’s Estate Rum
- Take above ingredients, place in blender or food processor and mix together. Take 1 bag of Chicken wings or 4 to 6 chicken breasts and place the wings or breasts in a flat pan or container. Pour mixed ingredients over chicken wings and let soak for a couple of hours. We have found that the best cooking results are over an outdoor grill. Continue to spread rub over chicken wings or chicken breasts while cooking to keep the chicken moist
